Chicken and Pineapple Pizza




Ooo buddy! We eat homemade pizza a lot in our house because it is quick, easy, and cheap. This particular pizza has a medium-thick crust with a nice crunch on the outside; it holds its own when you add the toppings. There are just a couple of modifications I will make in the future. The pineapple's flavor was not as prominent as I would have liked, so next time I will use fresh pineapple and/or lightly salt it to enhance its wonderful sweetness. Also I will use red onions in the future both for the color and a slightly different flavor. White was all I had on hand, so I went with it. Zach claimed this as the best pizza I've made so far and was comparing it to California Pizza Kitchen. It is a really good pizza, and will definitely be made again! Below is the recipe I made today.


Chicken and Pineapple Pizza
Crust:
2 c. flour
1 t. salt
2 t. baking powder
2/3 c. water
1 t. garlic powder
1/2 t. Italian seasoning
1 T. parmesan cheese

Toppings:
1 medium to large chicken breast
1/4 c. pizza sauce
1 large clove garlic, minced
1 1/2 c. Italian blend shredded cheese
1-8 oz. can pineapple tidbits
1/2 thinly sliced onion
grated parmesan cheese
Italian seasoning
garlic powder
ground ginger
salt and pepper

Mix all ingredients for the crust together and knead it until it is workable and easy to spread, about 2 minutes. You may need to add a couple of drops of water to bring it to the correct consistency. Next spread it onto a pizza pan (I like using a pizza stone) using your fingers. Lightly brush with oil or cooking spray. Set aside.

Next season your chicken breast with salt, pepper, ground ginger, and garlic powder. Sauté in a skillet until golden brown on both sides. You may have to finish cooking in the oven. You want the chicken slightly undercooked because it will finish cooking on top of the pizza. (No one likes dry chicken.)

While the chicken is cooking, drain the pineapple well. Put the pizza sauce on the crust and spread evenly. Leave about a half an inch around the edges. Next sprinkle the garlic over the sauce, then the shredded cheese on top of that. Layer on the pineapple, chicken and onions. Season the top with salt, pepper, and a dusting of parmesan cheese.

Bake at 425 degrees for 15 to 20 minutes, until crust is done and lightly browned. Slice and enjoy!
